Easy Blueberry Cobbler

To make this an easy recipe, we replaced four standard ingredients—flour, salt, baking soda, and some of the sugar—with self-rising flour and sweetened condensed milk, allowing for minimal prep time. A final sprinkling of sugar gave the finished cobbler a gorgeous browned crust.
Servings: 8

Ingredients

  • 1 14-ounce can sweetened condensed milk
  • 6 ounces self-rising flour 1 ¼ cups, 170 grams
  • ½ cup whole milk
  • 8 tablespoons unsalted butter melted
  • 10 ounces blueberries 2 cups, 283 grams
  • 1 ¾ ounce sugar ¼ cup, 50 grams

  • Grease a 13 by 9-inch baking dish.
  • Whisk the condensed milk, flour, milk, and melted butter together in a bowl.
  • Pour the batter into the prepared baking dish.
  • Sprinkle the blueberries and sugar evenly over surface.

  • Serve warm with a scoop of vanilla ice cream.

Notes

Useful user suggestions:
  • I made this according to recipe but added lemon zest and pure vanilla extract.
  • I didn't have self rising flour. but it worked well adjusting with 1 1/2 tsp baking powder, 3/4 tsp salt and rounded 1/4 tsp baking soda.
