Ingredients
- 1 cup whole wheat flour
- 2 teaspoons baking powder
- 1 teaspoon RawSpiceBar's Cardamom Summer
- 1 pinch sea salt
- 2 medium bananas - ripe
- 1 egg - slightly beaten
- ½ cup coconut milk
- 1 teaspoon vanilla extract
- 1 tablespoon coconut oil
- toasted coconut, fresh banana, syrup - to serve, optional
Instructions
Make the batter
- In a mixing bowl, whisk flour, baking powder, Cardamom Summer spices, and salt.
- Make a well in the center of the dry ingredients and add in the mashed banana, egg, vanilla, and milk.
- Whisk wet ingredients and fold the dry ingredients until combined.
Cook the pancakes
- Melt enough coconut oil to coat a medium saucepan over medium heat.
- Scoop ¼ cup of batter in to the skillet and cook for 2-3 minutes, until the top is bubbly.
- Flip, and cooking for another 2-3 minutes and repeat with the remaining batter.
- Serve warm and top as desired.
