Cardamom Summer Banana Pancakes

Ingredients

whole wheat flour

baking powder

sea salt

bananas
ripe

egg
slightly beaten
½
cup
coconut milk

teaspoon
vanilla extract
1
tablespoon
coconut oil
toasted coconut, fresh banana, syrup
to serve, optional
Instructions
Make the batter
In a mixing bowl, whisk flour, baking powder, Cardamom Summer spices, and salt.
Make a well in the center of the dry ingredients and add in the mashed banana, egg, vanilla, and milk.
Whisk wet ingredients and fold the dry ingredients until combined.
Cook the pancakes
Melt enough coconut oil to coat a medium saucepan over medium heat.
Scoop ¼ cup of batter in to the skillet and cook for 2-3 minutes, until the top is bubbly.
Flip, and cooking for another 2-3 minutes and repeat with the remaining batter.
Serve warm and top as desired.
