Butter Swim Biscuits

You guys, these biscuits are SO GOOD. They rise sky-high and are fluffy and light, but since they were basically bathed in butter, all the exterior surfaces are lightly crisped and a delicate, buttery flavor runs throughout every bite. They also happen to be easier to make than a simple drop biscuit. There’s no rolling or cutting out… you don’t even have to portion out the dough.
I mean, the name says it all… Butter Swim Biscuits. If you can choose a regular old buttermilk biscuit or one that’s been baked in a sumptuous bath of butter, what are you going to go with? It’s an easy choice. Because the only thing better than butter is more butter.

Ingredients

  • cups all-purpose flour
  • 2 cups buttermilk
  • 1 stick butter 1/2 cup, melted
  • 4 teaspoons baking powder
  • tablespoons granulated sugar
  • 2 teaspoons salt

Instructions

  • Preheat the oven to 450°F.
  • In a medium bowl, whisk together the flour, baking powder, sugar, and salt.
  • Add the buttermilk and mix just until a moist dough is formed.
  • Pour the melted butter into an 8x8-inch baking dish and place the dough on top of the melted butter.
  • Using a spatula, spread the dough evenly across the pan until it touches the sides. As you spread the dough out to the corners, the butter starts to surround it, so it covers every nook and cranny.
  • Cut the dough into 9 equal squares.
  • Bake until golden brown, 20-25 minutes. Enjoy!
